Serves 3:

Time: 35-45 min

Ingredients:

2 cups of GF flour

2 Tbsp Baking Powder

1 Tsp Stevia (or sweetener of choice)

2 Tsp Vanilla extract

2 Tsp Coconut Oil (optional)

2 Tsp Apple Cider Vinegar

Water

Directions:

In a large mixing bowl add the following ingredients:

 

-2 Cups of GF Flour

-2 Tsp Baking Powder

-1 Tsp Stevia

Mix these ingredients

In the same bowl, you will need to add your wet

ingredients. Add the following ingredients to your 

dry mixture:

-2 Tsp Vanilla Paste

-2 Tsp Coconut Oil

-2 Tsp Apple Cider Vinegar

-½ cup water

-Mix

-Add an additional ⅓ cup water

You can add your desired flavors like coconut, walnuts, or chocolate chips into the batter or you can place them on top of the pancakes as they are cooking on the skillet. For non messy results, I recommend adding your toppings into the batter. 

Heat a skillet on medium heat 

 

Scoop batter and add to a warm skillet

You should see bubbles appear as it is cooking, just as you would with regular pancakes. Cook both sides and serve with some fresh maple syrup. Enjoy!
