Mashed Potatoes & Gravy 

 

Serves 3

Time: 45 min

Ingredients:

2 tbsp olive oil + 2 or 3 more tbsp for mashed potatoes

2 cups of sliced mushrooms

1 large red onion chopped

3 cloves of garlic

1 tsp steak seasoning (or sub with black pepper)

¼ tsp rosemary

1 tablespoon paprika

1 tsp onion powder + 1 more tsp for mashed potatoes

1 tsp garlic powder + 2 more tsp for mashed potatoes

Lemon Pepper (to taste)

Salt (to taste)

4-5 drops of Liquid smoke* (optional)

1 tablespoon of pickle juice

1 tablespoon of Gluten Free Flour

1 tablespoon of vegan bullion or vegetable stock

Water as needed

1 tsp corn starch

3-4 Potatoes

Vegan butter (optional)

Green onions (optional garnish)

Sun-dried Tomatoes (optional garnish)

Directions:

1. Peel and boil your potatoes until soft

2. While you're waiting for the potatoes to soften, In a large sautéing pan, sautée the following ingredients 

on medium/high heat:

2 tbsp olive oil

2 cups of sliced mushrooms

1 large red onion chopped

3 cloves of garlic

1 tsp steak seasoning (or sub with black pepper)

¼ tsp rosemary

1 tablespoon paprika

1 tsp onion powder

1 tsp garlic powder

Lemon Pepper (to taste)

Salt (to taste)

4-5 drops of Liquid smoke* (optional)

1 tablespoon of pickle juice

1 tablespoon of Gluten Free Flour

1 tablespoon of vegan bullion or vegetable stock

Water as needed

1 tsp corn starch

 

3. Then blend in vitamix 👍🏼

(keep warm in pan until mashed potatoes are ready)

4. Mashed potatoes:

Drain potatoes when soft

 Add salt (to taste)

2-3 tbsp olive oil

1 tsp onion powder

2 tsp garlic powder

Now, mash! (If the potatoes are too dry, you can add more oil, vegan butter, almond milk or any non flavored plant based milk until creamy) Garnish with your favorite toppings! I used green onions, parsley and sun dried tomatoes ☀️🍅
