Super Healthy Ice Cream Sandwiches



3 Cups Oat Flour

3 Boiled Sweet Potatoes

2 Tsp Cinnamon

1 Tsp Pumpkin Spice

5 Frozen Bananas 

1 tsp Stevia or Agave to sweeten x2

Parchment Paper

1 tbsp almond milk (or more)


1. In a large bowl mix your boiled sweet potatoes, oat flour,

cinnamon, pumpkin spice, and 1 tsp of stevia.

2. On a baking sheet lined with parchment paper, scoop and

shape your mixture into large cookies. 

3. Bake at 350 degrees for about 25-30 minutes or until the cookies firm up. 

4. Once they are ready, remove them from the oven and immediately put them in the fridge or freezer to cool down.

Assembling Nice Cream Filling and sandwiches:

1. Using a Vitamix, blend 5 frozen bananas using the Vitamin Tamper Accelerator Tool aka the plunger. Add 1 tsp of stevia and a tbsp of almond milk to help it blend well.  It should come to an ice cream consistency. 

2. Scoop your nice cream filling into your sandwiches (don't over fill, less is more). Once you finish assembling one, put it in the freezer so that it doesn't melt. Once all are assembled, you can either eat them right away, or allow them to firm up in the freezer for an additional 30 min or so. 

3. Enjoy by adding your favorite toppings! Chocolate, nuts, coconut flakes, powder sugar, etc.

Toddler Approved Choc Chip Cookies

(Gluten Free, Oil Free, Nut Free)

Serves 4

Time 20-30 Min


2 cups of oats

1 ripe banana

1 handful of Chocolate chips (add more or less as desired)

Parchment Paper



  1. Preheat oven to 350 degrees F.

  2. ​Mash banana until smooth

  3. Combine oats and chocolate chips. (If the mixture is too wet add more oats. If too dry add more banana.)

  4. Roll into cookie shapes and place cookies on a baking tray lined with parchment paper.

  5. Bake at 350 for 20 min. 

*Note: For the chocolate chips I like using the "Enjoy Life" Brand. They are Dairy, Nut and Soy free.
